Heat a wok or large skillet over high heat with a spray of oil.
Sear chicken cubes until browned and cooked. Remove.
Add veggies and a splash of water. Cover for 2 minutes to steam.
Return chicken. Pour in soy sauce, vinegar, ginger, and garlic.
Toss for 1-2 minutes until sauce coats everything.
